1/4 Cup Creamy Peanut Butter
2 Tablespoons Soy Sauce
2 Tablespoons Rice Vinegar
1 Tablespoon Honey
1 Teaspoon Sesame Oil
1 Teaspoon Chilli Sauce
1 Clove of Garlic Minced
1/4 Cup of Water More or less to thin sauce to desired consistency
For the salad:
1 Package Smoked Tofu Diced
1 Head Lettuce. Chopped
1 Red Bell Pepper Sliced
1/2 Cup Shredded Carrots
1/2 Cup Chopped Spring Onions
1/4 Cup Coriander Leaves
1/4 Cup Chopped Peanuts



Make the Spicy Peanut Sauce:

Combine the peanut butter, soy sauce, rice vinegar, honey, sesame oil, chilli sauce, and minced garlic in a small bowl. Mix well to combine.
Add water to the sauce to thin it out to your desired consistency, and whisk until smooth.

To make the Salad:

In a large mixing bowl, combine the chopped lettuce, sliced bell pepper, shredded carrots, green onions, and coriander. Mix well to combine.
Sprinkle chopped peanuts over the top of the salad.
