400 GMS Thick Curd or Yogurt
2 TBSP Salt
1 TBSP Turmeric
1 TBSP Red Chilli Powder
1 TBSP Dhaniya Powder
2 TBSP Jeera Powder
1 TBSP Chicken Masala Powder
1 TBSP Garam Masala Powder
1 Lemon
2 Green Chillies
1 TBSP Ginger Garlic Paste
6 TBSP Cooking Oil
3 Onions
3 to 5 Biryani Masala Items - 3 Bay Leaves, 5 Cloves, 3 Elachi, 3 Star Anise, 3 Cinnamon, 3 Marati Moggu, and other
For Dressing
Chopped Cilantro or Coriander
Chopped Mint Leaves
1 Cup Fried Onions

Directions

Step 1: Chicken Marinade

To marinade the chicken, take a bowl and add 1kg chicken pieces and all the ingredients as shown in the video. NOTE: Whisk the plain curd/yogurt until it turns into a smooth and creamy texture. To the chicken, add 2 tablespoons of oil, 1 tablespoon of ginger-garlic paste, salt, turmeric powder, red chili powder, jeera powder, dhaniya powder, homemade garam masala powder, chicken garam masala powder and whole garam masala items. Then add all the greens - 2 green chillies, chopped coriander leaves, and 1 lemon juice.
Mix all the ingredients and keep them aside for 30 mins to marinade.

Step 2: Fried Onions

Heat the pan, add 4 TBSP of oil or ghee in a large or heavy bottomed pan. Add the thinly sliced onions and fry them over medium heat until they turn golden brown and crispy.
Remove the fried onions and set them aside for garnishing.

Step 3: Cook the Chicken

In the same pan with the remaining fried onions oil, add the marinated chicken. Sauté for a few minute and let it cook for about 10 to 15 minutes until the gravy turns little thick. Keep the chicken aside for 10 minutes, this helps in making the chicken pieces aromatic and juicy.
Note: As the chicken is marinated for 30minutes, it will not take much time to cook. NOTE: While the chicken is being cooked, simultaneously cook the rice.

Step 4: Prepare the Biryani Rice

Wash the basmati rice and remove the water. In a large pot, add 1 liter of water and let it come to boil. Then, add 1TBSP salt, 2bay leaves, 5 cloves, 3 cinnamons, 2 marati moggu, 3 cardamom/elachi and let it cook for a few minutes. Now, add the soaked rice and let it cook. Once the rice is 50% cooked add 1 TBSP jeera powder.
Let the rice boil on full flame till 80% cooked. Once it is cooked, drain the water and keep the rice aside. NOTE: While the rice is being cooked, simultaneously cook the chicken.

Step 5: Layering Chicken Dum Biryani

Over the chicken, add some fried onions, sprinkle chopped coriander and mint leaves. Now, layer half of the partially cooked rice. Repeat the layering process, until the rice is completely added on top of the chicken. Garnish with the remaining mint, coriander leaves, and the fried onions set aside earlier.
Now, cover the pan with a tight-fitting lid or seal with aluminum foil to trap steam. Cook on low heat for about 10-15 minutes or until the chicken is cooked through and the rice is fully cooked. You can also place a heavy pan or tava (griddle) under the biryani pot to ensure even cooking and prevent burning. Once done, remove from heat and let it rest for a few minutes before opening the lid.
